Gestational diabetes sucks. Like I mean really, really sucks! Especially for me since I’m a huge foodie. I love everything from cookies, cake, fruit, bread, basically all the things that I really can’t have very much of.
I’m not sure how “snack” friendly this is since the carb count would probably be about 20-25 and in between meal snacks allow for 15 carbs. This is probably better as a nighttime snack before bed since I’m allowed 30 carbs so that’s when I’ll most likely have them.
It’s supper easy to make and tastes so yummy, kind of like chocolate soft serve!
Here’s what I used:
- About a cup of unsweetened almond/coconut milk since that only has 1 carb (much, much less than regular milk),
- A half of a banana
- A couple spoonfuls of “Almond Dream” chocolate non-dairy ice cream
- A couple of ice cubes. I don’t like my smoothies very thick but you can add more ice if you do.
